Healthy Start for Decorating

Nothing better than a well rounded breakfast to start Holiday Decorating off right!!!

Ingredients for eggs:
Two whole eggs with one eggs white (scramble in mix bowl)
Mushrooms (diced)
Shallots (thinly slice)
Olive oil
Cheese
Salt and Pepper

Ingredients for Kale Chips:
Kale
Olive oil
Salt and pepper

Preheat oven to 400 for kale chips, clean kale and break into pieces that work for both the size of the plate and guests. (Small hands/kids smaller ships) spray Kale chips with Olive oil and lightly salt and pepper. Place on baking sheet (no need to spray sheet with anything because its on the chips). Hold aside till eggs go in the pan.

Eggs:
Thinly slice shallots and mix with olive oil salt and pepper. Brown in a non stick pan, once brown coloring appears mix in diced mushroom. When the aroma fills the kitchen place the Kale chips in the oven for 6-8mins (check on them to see tips of the chips have a charred finish- that means they are done). Back on the stove top with the pan mix in the eggs. Allow to settle with the shallots and mushrooms before you begin scrambling. This keeps the color of the eggs yellow instead of brownish because of the water escaping from the mushroom and shallots during browning. With a minute left to the eggs (cook time based on firmness liking of those eating the eggs so 4-7 mins, soft and runny vs firm and well done respectively) check the Kale chips if edges are charred remove from oven. If the eggs are to your liking turn the flame off and begin plating. Grab some kale chips and add to the plate and serve with fresh coffee. Then begin decorating and leave the mess in the kitchen for those who enjoyed the cooking to clean up!!!
